Buy fresh corn and use it promptly. Freshly harvested corn has the sweetest, most delicious flavor, and it loses that flavor as time goes on.
Do I need to cook the corn?
No need! Corn kernels are fine to eat raw and to keep this salad as simple as possible we skipped it. If you would rather cook your corn first, you can heat over the stove with a little butter until lightly charred or boil in water until tender.
Can this be made ahead of time?
Absolutely! It’s the perfect make ahead dish and will hold in the fridge overnight and even helps the flavor as it sits. We like to hold on adding the feta until ready to serve!
Can I replace the feta with something else?
Even though we are avid feta lovers at Delish, we get if you don’t like it. You can skip the cheese completely or replace with some cojita, Parmesan, or shredded mozzarella!
- 4 c. fresh or frozen corn, defrosted
- 1/3 c. crumbled feta
- 1 c. cherry tomatoes halved.
- 1/4 red onion, finely chopped.
- Juice of 1 lime.
- Freshly ground black pepper.
- Kosher salt.
- 1/4 c. basil, thinly sliced.
- 3 tbsp. extra-virgin olive oil.
- Toss all ingredients together in a large bowl, then season with salt and pepper.
